Battleview’s Corn Bread
1/2 teaspoon flour
2 tablespoons butter
1 teaspoon baking powder
1-1/2 cups grated cooked corn (3-4 ears)
1/4 teaspoon baking soda
1 egg, slightly beaten
3/4 teaspoon salt
1/2 cup milk
In a large bowl combine and sift dry ingredients. Cut in butter. Add corn and mix well. Add egg and milk to mixture and stir until well blended. Pour into greased 8 x 8 x 2 inch pan. Bake in a 425 degree F oven for 25 minutes. Serve warm!!!
Jersey Fresh Corn Bake
4 tablespoons melted butter
1/2 teaspoon salt
1 tablespoon flour
Dash of black pepper
3/4 cup milk
4 eggs, beaten
2 cups uncooked corn, grated or cut from the cob (5-6 ears)
In a large bowl, combine melted butter, flour, salt, pepper, milk and corn. Add eggs and blend well. Pour mixture into a 2 quart baking dish. Bake in a 350 degree F oven for 40 minutes.
Simple Corn Cooking…
Boil… Place husked corn in large pot of boiling water. Cover and cook for 4 to 6 minutes.
Microwave… Put 4 ears of husked corn in a dish with 3 tablespoons of water. Cover and cook on high for 6-8 minutes. Let stand for a few minutes to finish cooking.
Grill… Pull husks back and remove the silk. Pull husk back over the corn and soak in water for 10 to15 minutes. Place on grill, 4 inches from the heat source. Cook 15 to 20 minutes, turning occasionally.
Roasting… Husk corn. Brush corn with butter. Sprinkle with your favorite seasoning. Wrap each ear in foil and roast on the grill for 15 to 20 minute
